A word on Chai
We were at our friend's birthday tea party a couple of months ago, it was there that we had some lovely home brewed Chai Masala tea or Chai Latte as the beverage is known as these days. We finally equipped our kitchen with a mortar and pester last week; I made Chai Masala tea to ease my cold winter Monday.
Here is the recipe.
Ingredients
1 cinnamon stick
2 green cardoman pods
2 cloves
1 star anise
2 teaspoon of ginger powder
2 tablespoon black tea leaves (I used Black English Breakfast Tea)
Fresh Milk (quantity according to how many cups you are planning to serve - minimum 2 standard measuring cup)
Cinnamon sugar and honey to taste
Method
1. Combine and grind all dry spices in a mortar and pester (alternatively use a coffee grinder or food processsor).
2. Combine dry spices and black tea leaves with fresh milk and bring to a boil. Simmer for 2-3 minutes.
3. Strain and pour into frothing jug. Froth with espresso machine.
4. Serve with a dash of cinnamon sugar and a teaspoon of honey.
