Italian Monday and Tuesday
It was Italian Monday and Tuesday at our household this week.
Monday's Menu
Spaghetti Con Pesce Dacqua dolce (Spaghetti with fresh water fish)
I came across this recipe in July's edition of the Australian Gourmet Traveller. I am a tough critic when it comes to olive oil based seafood pasta. I have come across many of recipes but rarely come across one that takes me to sea . This recipe has join the ranks of Pete Evans and Matt Morans Linguini Prawns. Here is the recipe (1 hour from stove to table).

Salad greens and cherry tomatoes with a white wine vinaigrette
My favourite Italian salad vinaigrette, here is the recipe:
3 tbsp extra virgin olive oil
1 tbsp of white wine vinegar
salt and pepper to taste
Shake to combine.
Tuesday's Menu
My lazy cook aglio olio fettucine
This is a good recipe to add to your repertoire for busy day's. Takes only 30 minutes from oven to table (I promise; cross my heart), here is the recipe:
Ingredients
300g rasher bacon (sliced into bite size chunks) or a can of spam (diced into cubes)
3 whole bacon bulbs ( washed and cut into halves)
A good drizzle of light olive oil
season well with pepper
Italian flat leaf parsley (chopped roughly)
Fettucine
Method
ALL on a baking tray lined with aluminium foil (shiny side up). Preheat oven to 150 degree celsius and bake for 20 minutes. Mean while, cook pasta until al dente (6-8 minutes) and set a side. Remove aglio olio from the oven and toss with pasta and parsley.
Serves 4.
Greens with a lemon vinaigrette
3 tbsp extra virgin olive oil
1 tbsp of freshly squeezed lemon juice
salt and pepper to taste
Shake to combine.
Enjoy!
