Comfort food
"Spring has finally arrived!", I heard someone say the other day. Gone are the days where getting dressed for work meant putting on a jacket on top of the two piece suit and shirt we already have on. Think again! I braved the rain and cold today in my short sleeved shirt and pinafore work dress. Grateful that the rain held off until I arrived home, I made braised yam (taro) with dried shrimp and omelet with salted fish. Here are the recipes. Serves 2.
Braised Yam (Taro) with dried shrimp
Ingredients
Yam (medium size cut into equal portions)*
Garlic (3 cloves finely chopped)
Dried shrimps (a hand full or approximately 2 tablespoon)*
Vegetable oil (2 tablespoon)
Oyster sauce (1 tablespoon)*
Water (enough to cover yam)
Salt to taste
*Available at any good Asian grocery shop
Method:
1. Wash dried shrimp and sauté lightly in wok until fragrant. Add vegetable oil and garlic. Stir fry lightly until garlic is slightly golden.
2. Add yam, oyster sauce and salt. Stir fry for 2-3 minutes to combine flavours.
3. Add water and braise yam on low heat for 20 minutes. Stir occasionally until sauce thickens. Serve hot.
Omelet with salted fish
Ingredients:
4 eggs (beaten)
Salted fish (small fillet chopped roughly - about 2 tablespoon)*
Vegetable oil (2 tablespoon)
*Available at any good Asian grocery shop
Method:
1. Heat vegetable oil in wok. Wok must be hot prior to adding salted fish.
2. Sauté salted fish until golden and fragrant. Add eggs to form omelet. Serve hot.
