My Thai Green Mango Salad
Green mangoes bring back memories of home; stopping at the salad hawker stationed by the road side buying a tropical salad on a hot 40 degree day. I was delighted to find green mangoes at our local Asian market the other day, just had to buy them with making a Thai green mango salad in mind. I tasted this fabulous summer salad at a Thai restaurant during my recent trip back home. Here is my rendition of this dish.
Serves 2. Preparation time 30 minutes.
What you need
3 green mangoes (julienne into thin strips)
2 green limes (juiced)
2 shallots (sliced thinly)
2 small bird's eye chillies (sliced thinly)
2 tablespoon fish sauce (toasted in hot wok)
1 tablespoon brown sugar
2 tablespoon dried shrimps
How to cook
1. For salad, combine mangoes, shallots, chillies and toasted dried shrimp in salad bowl;
2. For sauce, combine fish sauce, brown sugar and lime juice. Pour over salad just before serving.
Where to get
Fish sauce - any good Asian grocery shop and most large supermarkets.
Green mangoes - any good Asian grocery shop (Thai or Vietnamese in particular).
Dried shrimp - any good Asian grocery shop.
